Notes on a Pie

Tuesday's pie is good, but not great. The crust is very tender (perhaps a little more kneading and a little less water?) and combined with the delicate flavor of the white peaches, the effect of the whole pie is a little bit muted. It's definitely good enough to eat, and pretty to look at, just not the best pie I've ever made. I'm going to go for a shortening crust (does anyone know of an organic Crisco, or is that an oxymoron?) and yellow flame peaches, or maybe rhubarb! next time.
